Grilled Salmon Tarragon Recipe

Serves 4

Ingredients:

  • 4 salmon fillets (6-8 ounces each)
  • Salt and pepper
  • 1 medium onion, diced
  • 2 teaspoons dried tarragon
  • 2 tablespoons shallots, chopped
  • 1/2 cup white wine
  • 2 tablespoons Dijon mustard
  • 1/4 cup chicken stock
  • 1/4 cup light cream

Instructions:

  1. Preheat grill to medium-high. Sprinkle salmon fillets with salt and pepper; let stand for 5 to 10 minutes.
  2. Add remaining ingredients to medium saucepan; bring to a slow boil.
  3. Grill salmon over medium-high heat until flesh is just opaque throughout.
  4. Drizzle with sauce, and serve.
